Lehigh Valley food safety inspections: Dead mouse in hall; droppings all over storage area; dirty drink nozzle

Here are the food safety inspection reports from Lehigh and Northampton counties, conducted the week of Nov. 5.

Each week, we highlight the inspection reports provided through the Pennsylvania Department of Agriculture. The department performs the inspections in many areas, while some municipalities such as Allentown and Bethlehem conduct their own inspections.

All establishments are inspected once per year, and inspectors may return several more times if the initial inspection is not passed or complaints are received. (For more information on how food safety inspections are conducted in Pennsylvania, view a s.)

As noted by the Department of Agriculture, the reports are merely a “snapshot” in time, and they may not be representative of the restaurant’s long-term condition. Many of the violations are corrected on the spot prior to the inspector leaving the establishment.

If a food provider is considered “out of compliance”, that means it has one or more violations that require a return visit by an inspector. The establishment is given time to fix the violations and remains open for business.

Additionally, chips were observed to have adulterated packaging due to rodent activity. Inspect and rotate product regularly to ensure its integrity. All products were discarded.
  • Paper towel was not available at the handwash sink in the bathroom area. Staff placed paper towel during the inspection.
  • Facility has an active rodent problem and does not receive pest treatments frequently enough to adequately address the issue. Increase pest treatments to a bi-weekly regimen. Continue working with pest provider and retain all invoices from pest treatments.
  • Mops are not being hung to air dry. Hang mops to air dry.

  • Plastic containers were observed in the bathroom handwash sink, indicating uses other than handwashing. These were removed during the inspection.
  • Lights are not shielded or shatter proof inside walk-in cooler and in the hall storage area. Shield all lights.
  • Paper towel was not available at the handwash sink in the bathroom area. Staff place paper towel during the inspection.
  • Ceiling located in the hall storage area is uncovered. Install ceiling tiles or drywall to enclose ceiling. –Several stained ceiling tiles were observed where beer cases of Heinekens are located. Replace ceiling tiles.
  • Potential rodent harborage areas inside the food facility observed in the back-room area due to extreme amount of droppings in the facility. Clean out the backroom to prevent rodent harborage. Facility has an active rodent problem and does not receive pest treatments frequently enough to adequately address the issue. Increase pest treatments to a bi-weekly regimen. Work along with pest provider and retain all invoices from pest treatments.
  • A dead mouse was observed in the hall storage area. This was removed during the inspection.
  • An accumulation of items no longer relevant to the operation was observed in a rear storage room, behind the counter and in the generator area. Remove these items from the facility.
  • The fans in the walk-in cooler and all refrigerators are covered in dust. Clean the fans.

  • Raw meats were stored in the walk-in coolers in the basement not according to internal cooking temperature. Raw fish was below chicken. Beef was also below chicken. Rearrange foods so they are stored in order of internal cooking temperature.
  • Boxes of food items were stored on the floor in the basement walk in cooler. Move these boxes so they are at least 6 inches off the floor.
  • Test strips are available but not being used evidenced by the extremely high chlorine concentration in all the wiping buckets. Use test strips to check sanitizer concentrations.
  • The inside nozzle of the drink dispenser at the bar is dirty. Wash, rinse, and sanitize the nozzle.
  • A ladle was inside the hand sink closest to the cookline at the time of inspection. The ladle was removed from the sink. Ensure no items are placed in hand sinks.
  • Soap was not available at the handwash sink in the bar. Replace the soap.
  • Rodent droppings were found throughout the basement storage area. Clean the affected shelves. Increase pest control measures.
  • Chlorine sanitizer in all the wiping buckets is at an extremely high concentration at or above 200ppm. Adjust the solution to be between 50-100ppm.
